It's olive (preserving) season!15-05-2012
Saturday 12 May saw the Learning Centre kitchen play host to an olive preserving masterclass! Teresa Oates led a relaxed and informative workshop with lots of tastings along the way. The group was led through a number of olive preserving techniques – kalamata olives in brine, drying manzanilla olives and frying black olives with garlic and chilli – yum! Teresa also taught the group a technique for preserving green tomatoes and creating delicious green olive bread.
I learnt a lot, and feel confident now that I will be able to successfully preserve my olives, as before it was a bit hit and miss. Workshop participant
The workshop concluded with a shared lunch of a simple salad from the Learning Centre garden, cheese, salami, olive bread made on the day, a variety of olives and a glass of wine. Not a bad way to spend a rainy Saturday morning!
A huge thank you to Teresa Oates for running an engaging and fun workshop. Teresa has presented a number of our public workshops in the past year. She shares our philosophy and passion for beautiful seasonal food and we are grateful for her generous support of the Foundation. You can find olive preserving recipes along with recipes for many other delicious Southern Italian dishes in Teresa’s book Mangia! Mangia! (available from her website mangiamangia.com.au).
