It's olive (preserving) season!

Saturday 12 May saw the Learning Centre kitchen play host to an olive preserving masterclass! Teresa Oates led a relaxed and informative workshop with lots of tastings along the way. The group was led through a number of olive preserving techniques – kalamata olives in brine, drying manzanilla olives and frying black olives with garlic and chilli – yum! Teresa also taught the group a technique for preserving green tomatoes and creating delicious green olive bread.

I learnt a lot, and feel confident now that I will be able to successfully preserve my olives, as before it was a bit hit and miss. Workshop participant

The workshop concluded with a shared lunch of a simple salad from the Learning Centre garden, cheese, salami, olive bread made on the day, a variety of olives and a glass of wine. Not a bad way to spend a rainy Saturday morning!
