Ben specialises in using the freshest ingredients and cooking techniques of predominantly Thai, but also Malay, Chinese, Indian and Laotian traditions, to create aromatic dishes with vivid flavours. His hawker-style food is fun, experimental and designed to be shared.

Ben’s culinary inspiration comes from far and wide; he has learnt from the best in the industry both overseas and on home shores. There’s nothing quite like picking produce straight from a farm and this knowledge has been influential in inspiring Ben to use the finest ingredients in his cooking. He has travelled extensively around Indonesia with his family sampling village cuisine and learning techniques straight from the home-cooks, growers and producers in local areas.

Ben will lead a morning of hands-on cooking focusing on technique (his knife skills are truly impressive!) as well as experimental flavour combinations that will make your tastebuds sing. Participants will create aromatic dishes with adventurous flavours and vivid spicing from garden-fresh ingredients. The dishes on the menu are designed to be shared and we will do just that – a delicious shared lunch that will be long remembered.

Please wear covered shoes suitable for working in the kitchen. 

Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.

Public transport is often a good way to get to Collingwood College, with Collingwood train station only minutes away. However, on Saturdays there is usually parking available in the immediate vicinity of the College. Other parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.

Please note, the Foundation endeavours to proceed with each Public Workshop as planned, however in the instance of very low numbers of registrants or other unfortunate events we reserve the right to cancel a workshop up to 48 hours before scheduled. In all cases we will do our utmost to inform registrants a week in advance of any cancellation, and a 100% refund will be made.
