This workshop will cover the basics of brine fermentation techniques for vegetables. Beginning with a brief history of fermentation, we will cover what fermentation is, how it works, reasons to ferment food, and finally, all about how to brine vegetables. Participants will prepare sauerkraut and kimchi to ferment at home, and taste test samples provided by Darcy.
 

Darcy is a self-professed food nerd, activist, and fermentation enthusiast, with a passion for local, organic fare. Combining 8 years of experience in facilitating community arts workshops, 10 years experience in vegan cookery, and several years of tinkering with DIY fermentation, Darcy takes a hands-on, low-tech approach to food workshops, empowering people to be more involved in food, their bodies, and the world around them.
