Teresa Oates, co-author of 'Mangia! Mangia!', joins us in this first of three very special workshops focusing on home-style Southern Italian food. We will be learning the techniques for making both salamis and sausages at home, then cooking up a simple but flavoursome light lunch.

Held in our Learning Centre kitchen in Collingwood, Teresa Oates of 'Mangia! Mangia!' fame will lead this hands-on workshop that teaches the Southern Italian arts of making salamis and sausages. We will explore salami mixes, salt ratios and the overall curing process, and create some beautiful homemade sausages. We will then cook our produce to present as the focus of a beautiful home-style lunch accompanied by breads, roasted peppers, seasonal salads and a glass of wine.

Please wear covered shoes suitable for working in the kitchen.

Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.

Public transport is the best way to get to Collingwood College, with Collingwood train station only minutes away. There is generally no parking in the immediate vicinity of the College. Best parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.
