
It's the perfect time of year to be making your own salamis and pancetta. Angela Villella, co-author of Mangia! Mangia!, joins us again in 2012 after hosting a series of highly successful workshops in 2011. In her warm and generous way Angela will guide you through the hands-on techniques for making both salamis and pancetta at home in the Calabrian style.

Held in our Learning Centre kitchen in Collingwood, Angela Villella of Mangia! Mangia! fame will lead this hands-on workshop that teaches the Southern Italian arts of making pancetta and salamis. We will explore salami mixes, salt ratios and the overall curing process, and may even make some delicious homemade sausages too. The produce will become the focus of a beautiful home-style lunch accompanied by breads and seasonal salads, along with a glass of wine.

Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.
Public transport is usually the best way to get to Collingwood College, with Collingwood train station only minutes away. On Saturdays there may be limited parking in the immediate vicinity of the College. Other parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.
