This workshop, led by Tony Chiodo, is dedicated to some really beautiful gluten-free  foods. Learn to use local seasonal produce, wholegrains, legumes, natural seasonings and sweeteners, to create healthier and gluten-free versions of the classics.

Details

Tony Chiodo was apprenticed at Mietta's in Melbourne before moving to Italy to work in some of the country's top restaurants. After returning to Australia he was soon travelling again, this time to study Ayurveda, meditation and yoga in Japan and India. This began his journey into natural health and natural foods, along with a stint at Wild Rice Wholefoods Cafe, before Tony embarked on his own adventure with Cafe Angelica in Kew. He went on to qualify as a macrobiotic and wholefoods teacher at the Kushi Institute, Boston. Through his Eating Well programs and regular articles in The Age's 'Epicure' and Australian Natural Health, Tony inspires others to integrate natural foods into their daily lives. View his recipes and health tips on his website www.eatingwelldaily.com.au. The workshop includes a chance to sit and enjoy the recipes created in the morning over lunch with a glass of wine.

The menu will include wild field greens, ricotta and parmeggiano torta; polenta and broccoli slice with fresh pea crema; quinoa, beetroot and orange salad; spiced bread loaf with almond butter; heirloom tomato, mint and millet tabbouleh; sour cream tea cake; and walnut and cranberry biscotti.
