A firm believer in farm-to-table cooking, Massimo grew up on the family farm learning, growing, picking and cooking fresh produce. Massimo says ‘the one thing that makes Italian food amazing is ingredients, it’s that simple’.

In this class Massimo will share his food heritage focusing on classic techniques and making the most of local, fresh produce in a range of traditional dishes.

Details

Massimo Mele grew up with great Italian food being prepared in the kitchen by his grandmother, aunties and mother every day. Born in Tasmania and raised in Naples, Massimo moved back to Italy in 2006 to learn more about his Italian heritage and spent time in the south mastering the craft of true Italian cooking with skilled cooks.

Massimo has enjoyed much success as a chef and is currently Executive Chef of the Hugo's group of restaurants in Sydney where he carries on a tradition of fresh, nutritious, tasty food.

You will enjoy a morning of hands-on cooking and learning, sharing Massimo’s simple food philosophy before a group lunch of heart-warming dishes over a glass of wine.

Please wear covered shoes suitable for working in the kitchen. 

Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.

Public transport is often a good way to get to Collingwood College, with Collingwood train station only minutes away. However, on Saturdays there is usually parking available in the immediate vicinity of the College. Other parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.

Please note, the Foundation endeavours to proceed with each Public Workshop as planned, however in the instance of very low numbers of registrants or other unfortunate events we reserve the right to cancel a workshop up to 48 hours before scheduled. In all cases we will do our utmost to inform registrants a week in advance of any cancellation, and a 100% refund will be made.
