Mushrooms are delicious, versatile, full of goodness, and a bit intriguing. Did you know they can double in size in 24 hours, and can even hollow out a whole tree if that’s where they choose to grow? And that Coles growers Costa farms produce an astonishing 8 million mushrooms per week?
