Teresa Oates, co-author of 'Mangia! Mangia!', joins us in this second of three very special workshops focusing on home-style Southern Italian food. This session features a spring feast centred round freshly harvested globe artichokes, peas and broad beans.

Details

Held in our Learning Centre kitchen in Collingwood, Teresa Oates of 'Mangia! Mangia!' fame will lead this hands-on workshop that focuses on preparing globe artichokes, along with other key techniques for presenting spring vegetables. Participants will learn when to harvest this beautiful vegetable and how to prepare it in at least two ways, both stuffed and preserved. Accompanying this will be a broad bean risotto, allowing for the development of risotto-making techniques, and a deliciously simple pea and pancetta-filled ravioli where all pasta will be created on the night. Finally, the group will share in this bountiful feast accompanied by a glass of wine.
