Jude will lead the group through a fantastic menu, and share her knowledge and passion for Australian Aboriginal art and culture along the way. Come along and learn just how easy it is to include our native bush foods in your everyday cooking.

Hosted by Jude Mayall of Outback Chef, this workshop will begin with a brief discussion on native food, with samples and tastings, and an overview of how native food knowledge has been passed down through generations. Jude will also cover the process of preparing bush foods, for example when to use bush tomatoes and how to hydrate quandongs, as many ingredients are sold dried. The group will then move onto preparing an array of stunning bush food dishes.
Although the menu for the day is yet to be decided, you can expect dishes such as bush tomato tart with a green salad, fish cooked in paperbark with desert lime, pumpkin mediallions with lemon myrtle and mountain pepper, warrigal greens, and quandong crumble with wattleseed icecream. The array of dishes prepared on the day will be shared by the group for lunch along with a glass of wine.
An art curator, Botanical artist and speaker on Australian Aboriginal art and culture, Jude Mayall has been heavily involved in Australian Aboriginal art for over twenty years and has curated exhibitions in Australia and internationally. Through Jude's involvement in Aboriginal art and craft she learned a lot about bush tucker and bush food from the Aboriginal women who taught her through their vibrant and colourful paintings. These paintings not only increased her knowledge but also fuelled a desire to go further with Australia's native bush food … Outback Chef has been a natural and passionate progression.
Outback Chef is about showcasing Australia's native cuisine and teaching the best way to use the many herbs, spices, fruits and berries that grow naturally in this country.

Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.
Public transport is often a good way to get to Collingwood College, with Collingwood train station only minutes away. However, on Saturdays there is usually parking available in the immediate vicinity of the College. Other parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.
Please note, the Foundation endeavours to proceed with each Public Workshop as planned, however in the instance of very low numbers of registrants or other unfortunate events we reserve the right to cancel a workshop up to 48 hours before scheduled. In all cases we will do our utmost to inform registrants a week in advance of any cancellation, and a 100% refund will be made.
