In the Italian food calendar it's passata time, and what better way to learn to make it than in the warm home-style kitchen at our Learning Centre. Keryn Ursi from La Micia Cooking joins us for a fun and hands-on morning exploring and celebrating key summer produce and some of the best ways to preserve it.  

Details

Working in our Learning Centre kitchen in Collingwood, Keryn will explore the preserving methods of those staple summer fruits and vegetables so important in Italian cuisine – tomatoes, eggplant, capsicums and zucchini. Keryn will lead the group through making passata, capsicum conserva, melanzane sott'olio (pickled eggplant), zucchine sott'olio (pickled zucchini), peperoni sott'olio (pickled capsicums) and corn relish. The produce will become the focus of a beautiful home-style lunch accompanied by breads and seasonal salads, along with a glass of wine.

Please wear covered shoes suitable for working in the kitchen.

Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.

Public transport is usually the best way to get to Collingwood College, with Collingwood train station only minutes away. On Saturdays there may be limited parking in the immediate vicinity of the College. Other parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.
