Discover how a classic Italian dish can be reinvented using sustainable ingredients growing in our very own backyards, as Nornie guides us through how to make her special lemon myrtle cannelloni with verdant warrigal greens.

Nornie will share her years of experience as a professional chef and her passion for the kind of food she grew up making, introducing you to a few key native ingredients, including how to find and prepare them. 

You will receive the recipe upon registration, giving you time to gather your ingredients and equipment to cook along with Nornie on the day. All participants will also receive a recording of the event, so you can add this incredible dish to your list of favourites to make at home any time.

This online workshop is open to kitchen garden educators, as well as the general public, whether you are an experienced cook or just curious about all things native ingredients. 

All profits from the event will be re-invested into the Kitchen Garden Program – helping children and young people around Australia learn how to grow and cook their own sustainable fruit and vegetables.

Details

Nornie Bero is head chef and business owner of Mabu Mabu and Big Esso. Originally from Mer Island in the Torres Strait, Nornie has been a professional chef for over 20 years. Her style of cooking is all about generosity and flavour. She has been creating dishes using native ingredients for much of her career and is currently on a mission to make indigenous herbs, spices, vegetables and fruits part of everyone's kitchen pantry.  

The Stephanie Alexander Kitchen Garden Foundation acknowledges the many Aboriginal and Torres Strait Islander communities who have been gathering, growing, harvesting and sharing indigenous ingredients for over 60,000 years on the lands now known as Australia.

The outcomes of this course are aligned to the Australian Professional Standards for Teachers as outlined by the Australian Institute for Teaching and School Leadership (AITSL).

Attending Cook along with Nornie Bero will contribute evidence towards one hour of accredited professional development in maintaining the following standards:

1.3: Design and implement teaching strategies that are responsive to the strengths and needs of students from diverse linguistic, cultural, religious and socio-economic backgrounds.

1.4: Design and implement effective teaching strategies that are responsive to the local community and cultural setting, linguistic background and histories of Aboriginal and Torres Strait Islanders.

2.4: Provide students with the opportunity develop understanding and respect of Aboriginal and Torres Strait Islander histories, cultures and languages.

This online workshop will take place using Zoom. A link will be sent to all registered participants before the event. You can join the workshop using a computer, tablet or mobile phone. A recording of the workshop will be sent to participants after the session.
