During this 60-minute online cooking demonstration, Nornie Bero, head chef and owner of Mabu Mabu and Big Esso, will demonstrate:
• how to make her seasonal ravioli with wattleseed, pepperberry and saltbush spices
• seasonal swaps so this recipe can be used throughout the year
• tips for using Australian spices in other recipe favourites.
Meet the presenter
Originally from Mer Island in the Torres Strait, Nornie Bero has been a professional chef for over 20 years. Her style of cooking is all about generosity and flavour. She has been creating dishes using Australian native ingredients for much of her career and is currently on a mission to make indigenous herbs, spices, vegetables and fruits part of everyone's kitchen pantry.
The Stephanie Alexander Kitchen Garden Foundation acknowledges the many Aboriginal and Torres Strait Islander communities who have been gathering, growing, harvesting and sharing indigenous ingredients for over 60,000 years on the lands now known as Australia.

The outcomes of this course are aligned to the Australian Professional Standards for Teachers as outlined by the Australian Institute for Teaching and School Leadership (AITSL). Completing this online workshop will contribute evidence towards 1.0 hours of accredited professional development in maintaining the following standards:
1.3: Design and implement teaching strategies that are responsive to the strengths and needs of students from diverse linguistic, cultural, religious and socio-economic backgrounds.
1.4: Design and implement effective teaching strategies that are responsive to the local community and cultural setting. Linguistic background and histories of Aboriginal and Torres Strait islanders.
2.4 Provide students with the opportunity develop understanding and respect of Aboriginal and Torres Strait Islander histories, cultures and languages.
