
Food allergies and intolerances appear to be increasing, presenting an ongoing challenge for schools and early childhood services, who are likely to encounter a multitude of dietary needs.
Children may be allergic or intolerant to various ingredients, have particular needs because they are immune-compromised or may not consume certain foods for cultural or religious reasons. It takes confidence and some specialist knowledge to be able to substitute for restricted ingredients.
This workshop will talk through strategies for common allergies and intolerances, as well as potential ingredient substitutions. Risk assessment and kitchen spacing will be discussed as well as real life kitchen program examples from Collingwood College Kitchen Specialist, Desley Insall.
All educators involved in running kitchen classes and experiences are encouraged to attend.

During this one-hour workshop, our presenters will cover:
- common allergies, intolerances and cultural preferences
- popular recipe substitutions and tricks
- yearly kitchen program planning for dietary restrictions
- kitchen risk assessment
- school/service allergy, intolerance and anaphylaxis management
With over 16 years of experience as a kitchen and garden specialist, Collingwood College’s Desley Insall has inspired countless grade 3-6 students. She has also been a generous contributor to the wider Kitchen Garden Program community, training and mentoring new Specialist teachers, presenting at K.G professional development Australia wide, contributing curriculum and organising Foundation fundraising and media events showcasing Collingwood College K.G student's skills, knowledge, and engagement ever since the College first piloted the program in 2001. She is the creative mind behind the much-loved, oft-used Salad of the Imagination resource.

The outcomes of this course are aligned to the Australian Professional Standards for Teachers as outlined by the Australian Institute for Teaching and School Leadership (AITSL).
Completing Food For All will contribute evidence towards 1.0 hours of accredited professional development in maintaining the following standards:
1.1: Using teaching strategies based on knowledge of students physical, social and intellectual development and characteristics to improve student learning.
6.2: Engage in professional Learning and improve practice
7.3: Establish and maintain respectful collaborative relationships with parents/carers regarding children’s learning and wellbeing.
