This workshop, led by Keryn Ursi of La Micia Cooking, is focused on the beautiful and often underestimated traditional cuisine of Puglia in southern Italy (the heel of the boot!) Passed down through generations, Keryn will now share some history and culture as participants learn basic, rustic Pugliese cooking techniques through a menu of focaccia, panerotti and ricotta tart. The dishes will be combined with beautiful salads and bread and a glass of wine for lunch.

 

Details

Since 1997 Keryn has been influenced and immersed in Italian culture and its cuisine. Her Italian in-laws (Franco and Gabriella) have owned bars across Italy – Milan, Trani (Puglia) and Piandimeleto (Le Marche) for the past 40 years. And of course there’s Nonna Marianna (now 96) who started making pasta by hand herself at the age of eight.

Keryn has combined the skills passed on to her with hands-on authentic Italian cooking from renowned local restaurant Osteria La Gatta. Her recipes are inspired by a combination of Osteria La Gatta (Le Marche Italian cooking school) and Nonna Marianna’s traditional Italian authentic homemade cuisine.

Please wear covered shoes suitable for working in the kitchen.

Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.

Public transport is often a good way to get to Collingwood College, with Collingwood train station only minutes away. However, on Saturdays there is usually parking available in the immediate vicinity of the College. Other parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.

Please note, the Foundation endeavours to proceed with each Public Workshop as planned, however in the instance of very low numbers of registrants or other unfortunate events we reserve the right to cancel a workshop up to 48 hours before scheduled. In all cases we will do our utmost to inform registrants a week in advance of any cancellation, and a 100% refund will be made.
