
The remarkable Tony Tan joins us again in 2012, this time to introduce workshop participants to the delightful world of Cantonese yum cha and dim sum.
Details
Tony will guide the group through the detail and training required by chefs in the yum cha tradition. Participants will work together in the Learning Centre kitchen to create 4 or 5 varieties of dumplings and buns, learning some highly specialised techniques used to create Cantonese yum cha and dim sum in the process. Dishes may include anything from char siu bao to sui mai – Tony will let you know on the day!
The group will end the session by sharing a light lunch of the dishes created, served with a glass of wine.

Please wear covered shoes suitable for working in the kitchen.
Enter the College via the main reception area, which is located near the end of Cromwell Street, and follow the signs to the kitchen.
Public transport is usually the best way to get to Collingwood College, with Collingwood train station only minutes away. On Saturdays there may be limited parking in the immediate vicinity of the College. Other parking options are generally the north and south sides of Hoddle Street, in Gipps Street and in the parking zone at the end of Islington Street.
